  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1/4 cup crumbled cotija cheese
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook Your Rice: Start by preparing your rice according to package instructions until fluffy.
  2. Prep the Chicken: Slice the chicken breast into bite-sized pieces and season with salt, pepper, and chili powder.
  3. Sauté the Chicken: Heat olive oil in a skillet and cook chicken pieces until golden brown, about 5-7 minutes.
  4. Cook the Corn: In the same skillet, add corn and sauté for 3-5 minutes until charred.
  5. Make the Sauce: Combine mayo, lime juice, and half the cotija cheese in a small bowl.
  6. Assemble the Bowl: Add rice to a bowl and top with chicken, corn mixture, and drizzle creamy sauce over it.

Notes
