  • 1 cup Corn (Fresh, Frozen, or Canned)
  • 4 Tortillas (Corn or Flour)
  • 1 Lime (juiced)
  • 1/4 cup Cilantro (chopped)
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Pepper to taste

Instructions

  1. Prep your chicken: Pat the chicken dry and season with salt, pepper, chili powder, garlic powder, and onion powder.
  2. Cook the chicken: Heat a skillet over medium-high heat with oil and cook the chicken for about 6-7 minutes on one side.
  3. Flip and cook more: After flipping, reduce heat to medium and cook until the internal temperature reaches 165°F (75°C).
  4. Let it rest: Transfer chicken to a cutting board and let it rest for about 5 minutes.
  5. Prepare the corn: In the same skillet, sauté corn for 5-7 minutes until slightly charred and sweet; add lime juice.
  6. Slice the chicken into strips.
  7. Warm the tortillas: Heat tortillas in another skillet for about 30 seconds on each side.
  8. Assemble your tacos: Place chicken on a tortilla, top with sautéed corn, sprinkle with cilantro, and squeeze lime juice.
  9. Serve and enjoy with extra lime wedges on the side.

Notes
