Summer Pasta Salad

A vibrant and refreshing Summer Pasta Salad perfect for barbecues, picnics, or a light meal with friends.

  • 8 oz Pasta (any shape)
  • 1 cup Corn (Fresh or Frozen)
  • 1 Bell Pepper (Diced)
  • 4 slices Bacon (Cooked and Crumbled)
  • 1/2 cup Creamy Pesto Dressing
  • Salt and Pepper to Taste
  • Fresh Basil for Garnish (Optional)

Instructions

  1. Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your pasta and cook according to package directions until al dente.
  2. Prep the Ingredients: While the pasta is cooking, chop up your bell pepper and cook the bacon until crispy.
  3. Combine the Corn: If using fresh corn, grill or sauté it for a few minutes. Add it to a large mixing bowl.
  4. Toss It All Together: Once the pasta is ready, drain and rinse it under cold water. Add to the mixing bowl with corn, bell pepper, and bacon.
  5. Add the Dressing: Pour in the creamy pesto dressing, sprinkle with salt and pepper, and mix gently.
  6. Garnish and Chill: Top with freshly chopped basil. Let sit in the fridge for at least 30 minutes before serving.

Notes

Make ahead of time for the flavors to meld beautifully. Serve chilled or at room temperature.
