A delightful blend of sweet peaches, savory bacon, and smoky bourbon, perfect for spreading on toasted baguettes or serving with cheese boards.

Ingredients

Scale
  • 45 Fresh Peaches, peeled and chopped
  • 68 slices Bacon, cooked and chopped
  • 1 cup Brown Sugar
  • ¼ cup Bourbon

Instructions

  1. Prepare your peaches by peeling and chopping them into small, even pieces.
  2. Cook the bacon in a large skillet over medium heat until crispy and golden brown.
  3. Sauté the peaches in the skillet with 1-2 tablespoons of bacon drippings for 5-7 minutes.
  4. Add the brown sugar to the sautéed peaches and stir until melted and syrupy, about 5-10 minutes.
  5. Pour in the bourbon and allow the mixture to simmer for another 5 minutes.
  6. Stir in the chopped bacon and simmer on low for about 10 minutes longer.
  7. Blend the jam using a hand blender or transfer to a regular blender for a smoother consistency.
  8. Jar the jam into sterilized jars, seal, and store in the refrigerator.

Notes

The jam can be served on toasted baguette slices, as a topping for burgers, or paired with cheese. It keeps for up to two weeks in the refrigerator.
