Peach Shortcake Cookie Cups

Delightful cookie cups filled with sweet peach filling and topped with whipped cream, perfect for summer gatherings.

  • 1 cup cookie dough (store-bought or homemade)
  • 2 cups fresh peaches, diced
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 1 cup whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the cookie dough by letting it sit at room temperature for about 10-15 minutes.
  3. Shape a heaping tablespoon of cookie dough into a ball and press it into the bottom and sides of a greased muffin tin.
  4. Bake for about 10-12 minutes until the edges are golden brown.
  5. Prepare the peach filling by slicing peaches and mixing them with sugar and cinnamon.
  6. Fill the cooled cookie cups with the peach mixture.
  7. Top with a dollop of whipped cream just before serving.

Notes

Serve with fresh mint leaves and a drizzle of honey for an extra touch.
