  • 12 oz Cheesy Tortellini
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumbers, diced
  • 1 cup Bell Peppers, chopped
  • 1/2 Red Onion, diced
  • 1/4 cup Fresh Basil, chopped
  • 1/3 cup Olive Oil
  • 2 tbsp Vinegar (red wine or balsamic)
  • 1 tsp Garlic, minced
  • 1 tsp Italian Seasoning

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions until they float.
  2. Prepare the vegetables by washing and chopping the cherry tomatoes, cucumbers, bell peppers, and red onion.
  3. Make the zesty dressing by combining olive oil, vinegar, garlic, and Italian seasoning in a bowl or jar.
  4. Combine the cooked tortellini, chopped vegetables, and basil in a mixing bowl. Drizzle dressing and toss gently.
  5. Chill the salad for at least 15 minutes before serving to enhance the flavors.

Notes

For variations, add Kalamata olives, grilled proteins, or spices for a kick. This salad can be prepared ahead of time but keep the dressing separate until serving.
