Vegan Pistachio Donuts with Freeze-Dried Raspberries

Delightful vegan donuts made with ground pistachios and freeze-dried raspberries, inspired by cherished childhood memories.

  • 1 cup all-purpose flour
  • 1/2 cup ground pistachios
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup almond milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup freeze-dried raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and spray your donut pan with cooking oil.
  2. Mix the dry ingredients: flour, ground pistachios, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Blend the wet ingredients: whisk together almond milk, vegetable oil, and vanilla extract in a separate bowl.
  4. Combine the wet and dry mixtures by slowly pouring the wet ingredients into the dry mixture and folding until blended.
  5. Add the freeze-dried raspberries and gently fold them into the batter.
  6. Fill each donut cavity about halfway with the batter.
  7. Bake for approximately 12-15 minutes, or until golden brown and a toothpick comes out clean.
  8. Cool in the pan for about 5 minutes before transferring them to a wire rack.
  9. Enjoy with powdered sugar or a simple glaze.

Notes

Store leftover donuts in an airtight container for up to 3 days at room temperature.
