Vegan Strawberry Cookies

Delight in these Vegan Strawberry Cookies that celebrate summer with their sweet, juicy strawberry flavor and chewy texture.

  • 1 cup Fresh Strawberries, chopped
  • 1 ½ cups Oats, rolled oats
  • 1 cup Flour, all-purpose or whole wheat
  • ½ cup Maple Syrup
  • 1/3 cup Coconut Oil, melted
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • ½ tsp Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking sheet lined with parchment paper.
  3. Mix together the oats, flour, baking powder, and salt in a large bowl.
  4. Melt the coconut oil and mix with the maple syrup and vanilla extract.
  5. Combine the wet ingredients with the dry ingredients.
  6. Add the chopped strawberries to the dough.
  7. Scoop the dough onto the prepared baking sheet, spaced 2 inches apart.
  8. Bake for 12-15 minutes until edges are golden.
  9. Cool on a wire rack before serving.

Notes
