  • 2 green onions (scallions)
  • 23 cloves garlic (minced)
  • 1 tablespoon ginger (minced)
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Gather your ingredients and chop everything in advance.
  2. Heat the oil: In a large skillet, heat 2 tablespoons of sesame oil over medium heat.
  3. Sauté the aromatics: Add minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  4. Add the veggies: Toss in the mixed veggies and stir-fry for 2-3 minutes until tender but colorful.
  5. Make some space: Push the veggies aside and crack in the eggs, scrambling until fully cooked.
  6. Combine with rice: Add the cooked rice and mix well, frying for about 3-4 minutes.
  7. Season it up: Stir in soy sauce, salt, and pepper to taste.
  8. Finishing touches: Drizzle with more sesame oil and top with sliced green onions before serving.

Notes
