Watermelon Popsicles: The Ultimate Summer Treat

  • 4 cups Fresh Watermelon, cubed
  • 2 tablespoons Lime Juice
  • 2 tablespoons Honey or Agave Syrup
  • 1/4 cup Mint Leaves, chopped
  • Optional Add-ins: Coconut milk, yogurt, or fresh fruit pieces

Instructions

  1. Prepare the watermelon: Cut the watermelon into large chunks and remove any seeds.
  2. Blend it up: Place the watermelon in a blender with lime juice and honey. Blend until smooth.
  3. Strain (Optional): Strain the mixture through a fine-mesh sieve if a smoother texture is preferred.
  4. Add the mint: Stir in the chopped mint leaves into the mixture.
  5. Pour into molds: Fill popsicle molds and leave space for expansion.
  6. Freeze: Freeze the molds for 4 to 6 hours until solid.
  7. Enjoy: Run molds under warm water to release the popsicles and savor the taste!

Notes

These popsicles can also be dipped in melted chocolate or rolled in crushed nuts before freezing for extra indulgence.
