Healthy Vegan Mushroom Meatballs

Golden, tender meatballs packed with umami goodness, perfect for pasta, sandwiches, or as a snack.

Ingredients

  • 2 cups mushrooms, finely chopped
  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 1/4 cup onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions in olive oil until translucent, about 2-3 minutes.
  3. Add the garlic and mushrooms, cooking until the mushrooms are brown, about 5-7 minutes.
  4. Combine lentils, mushroom mixture, breadcrumbs, nutritional yeast, soy sauce, Italian seasoning, salt, and pepper in a bowl.
  5. Shape the mixture into 15-20 meatballs, about 1 inch in diameter.
  6. Bake on a parchment-lined sheet for 25-30 minutes, turning halfway through.
  7. Serve with marinara sauce, on pasta, or in a sub bun.

Notes

These meatballs can be frozen for up to 3 months and are great for meal prep.
