Zucchini Lasagna Casserole

A heartwarming twist on a classic dish with layers of savory ground beef, rich marinara sauce, creamy ricotta, and melty mozzarella, all between tender slices of zucchini.

  • 3 large zucchini
  • 1 lb lean ground beef
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the zucchini by slicing lengthwise into 1/4-inch thick strips.
  3. In a large skillet, cook the ground beef until browned, about 5-7 minutes.
  4. Add the marinara sauce and simmer for a few minutes.
  5. Assemble the casserole layers starting with meat sauce, then zucchini, ricotta, and mozzarella. Repeat until ingredients are used up.
  6. Cover the dish with aluminum foil and bake for 30 minutes; then remove foil and bake for an additional 10-15 minutes.
  7. Let it cool for about 10 minutes before serving.

Notes

This dish can be made ahead of time and is great for freezing. For a variation, try adding spinach or swapping the ground beef for Italian sausage.
