  • ½ cup unsalted butter, melted
  • 24 oz cream cheese
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs, at room temperature
  • ½ cup Biscoff spread
  • Whipped cream (optional, for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine crushed Biscoff cookies and melted butter until well combined. Press into a springform pan.
  3. Beat the cream cheese until smooth and creamy, then add sugar, sour cream, and vanilla extract.
  4. Add the eggs one at a time, mixing gently after each addition.
  5. Fold in the Biscoff spread until smooth.
  6. Pour the mixture over the crust and smooth the top. Bake for 50-60 minutes.
  7. Cool the cheesecake in the oven with the door ajar for about an hour, then chill in the fridge for at least 4 hours.
  8. Serve with extra Biscoff spread and whipped cream if desired.
